Prepare your icing the night before, place plastic wrap over icing pressing gently so as all the icing is covered. In the morning remove plastic wrap and run a spoon over surface to get rid of remaining air bubbles. Dip cookie allowing only one or two seconds to for cookie to settle. Lift, scrape excess icing on side of bowl and place on wax paper. Dip 6 cookies at at time. Starting with the first dipped cookie, pop air bubbles (if any) and scrape sides. Swipe the surface of the cookie first to wipe off crumbs.
