Pumpkin Cookies

Ingredients
2 c all-purpose flour
1 t baking powder
1 t ground cinnamon
1/2 t baking soda
1/2 t ground nutmet
1/2 c butter or margarine
1 c packed brown sugar
1 egg
1 c canned pumpkin
1 teaspoon vanilla
1 c raisins (optional; I don’t use them.)
1/2 chopped walnuts (optional; I don’t use them.)
Instructions
Grease a cookie sheet. Preheat oven 375 degrees.
…Dry Ingredients
Stir together flour, baking powder, cinnamon, soda, and nutmeg.
…Wet Ingredients
In a mixer bowl beat butter for 30 seconds.
Add brown sugar and beat til fluffy.
Add egg, pumpkin, and vanilla; beat well.
Add dry ingredients to beaten mixture; beating til well combined.
Stir in raisins and walnuts (optional)
Dough will be soft.
Drop from a teaspoon 2″ apart onto a greased cookie sheet.
Bake 8-10 minutes.
Cool on a wire rack.
Makes about 48.
